Sometimes out of tragedy comes triumph. After a bout with cervical cancer, and during her time recovering with chemo and radiation, Janice was going stir crazy at home, not being able to work in the public sector. She asked, "What do I know how to do with which I could hit the ground running?" One evening while cooking, she slit open a pork tenderloin, stuffed it with apples, onions, and peaches, added white wine, covered it and popped it in the oven. When the roast was done, the fruit and wine had created the most delectable jam sauce in the bottom of the pan. Eureka moment - a line of hand crafted, small batch confitures, each with their own wine component. Since then, she has added moonshine and spirits. Knock wood, still cancer free, upright, and going strong!
